Interview: Diz’s Cafe, Manchester

Meet Gary (Diz) Window, Diz’s Cafe Owner, Operator and Chef; Billy Martin, Diz’s Cafe General Operations Manager; Judi Window, Diz’s Cafe Co-Owner

Diz’s is the culmination of a vision that goes back to when head chef, Gary (Diz) Window was a teenager with a dream of one day owning and running a restaurant. After years of working in restaurants throughout New England, he felt the time was right for an establishment that catered to the community. A quick meal, a leisurely time with friends and family, a fully packaged meal to bring home or one that meets specific dietary needs, Diz’s caters to options.

Gary (Diz) Window

Gary was nicknamed Diz by his oldest brother when he was just four years old. They were watching a movie about legendary baseball player and chatterbox Dizzy Dean. Gary, like Dean, would not stop talking throughout the movie and has been known as Diz to his family and close friends since. His life-long obsession has been to own his own restaurant – one he realized in early 2020 with Diz’s. He’s enjoyed a long and varied career in hospitality in the kitchen and operational and executive management at establishments including Angelo’s restaurant, Heather & Rolf’s, Wendy’s, TR Brennan’s and Shorty’s Mexican Roadhouse with Billy. Born in Manchester and a Memorial High School and UNH graduate with a degree in hotel administration, he’s glad to be living and working downtown in his hometown.

Billy Martin

Billy has been in the restaurant business during his entire career as a waiter, kitchen supervisor, butcher, prep cook, bartender, beverage director and assistant manager. He’s worked at several establishments in the area including Texas Roadhouse, Shorty’s Mexican Roadhouse and River Road Tavern. He grew up in Pelham and attended UNH, where he studied communications. Billy moved to Manchester in 2010 and calls it home. He looks forward to using his education and service industry experience in his new role to help share the story of Diz’s with new and repeat customers.

GSA Feedback:

“I learned the nuts and bolts information that I would need to refer a guest, and got a feel for the atmosphere without actually having dined there. The backgrounds of Diz and Billy would lead me to believe they know how to run a restaurant! The creative events and menu will bring guests back just to see what’s new.”

“I like that they welcome everyone and try to make it a fun experience. It sounds like they put a lot of thought into their menu with a different themed menu each month. It sounds like it would be a fun place to go.”

“I’m hungry! Seems like a very warm, friendly atmosphere to go to for a meal.”

“Loved hearing the descriptions of their food. Also how they’re really trying to integrate into the community by outreach and partnerships.”
